Description

These deviled eggs are a lighter, healthier twist on the classic recipe, made with creamy Greek yogurt instead of mayo. They make a great appetizer for parties or gatherings — and no one will guess they’re good for you!

Ingredients

Instructions

  1. Start by hard boiling the eggs. Place them in a pot and add enough cold water to fully cover them. Sprinkle in a little salt — it helps with peeling later.
  2. Cover the pot and heat it on high until the water boils. Once boiling, turn off the heat but leave the pot covered. Let the eggs sit for 12 minutes. After that, they’re done! You can cool them by rinsing with cold water or placing them in an ice bath.
  3. When the eggs are cool enough to handle, peel them and slice them in half lengthwise.
  4. Remove the yolks and place them in a bowl, setting the whites aside on a plate. Add the remaining ingredients (except the paprika) to the yolks and mash everything together. For a smoother filling, you can use a blender.
  5. Once the mixture is well combined, spoon it back into the egg whites. Sprinkle with paprika on top, and enjoy!
